    Pad thai

    OK, kitchen wizards, help me out here, please. HRH loves pad thai, but her favorite place for it went out of business. She doesn't really like how it's made at any of the other restaurants we've tried, so we want to try making it at home.

    She likes it spicy and not too sweet. Chief complaints about restaurant pad thais is they're too sweet and they taste fishy. So, no fish sauce. What she liked best about the place that went out of business was that the pad thai "tasted clean." Neither of us can explain what that means.

    She also loves pad siew, so I wouldn't turn down an easy recipe for that either.

    Suggestions? Keep in mind you're addressing novice cooks, please.

    I love Thai food and love cooking it, although I don't have a Pad Thai recipe.

    Here is a YouTube channel that I found that I have found helpful (and tasty). The woman is Thai and now living in Canada, I think. All of her recipes are fairly simple. I also don't care for fish or oyster sauce so I simply leave it out of any recipe that calls for it.
